heavy, adult pork and strictly of national origin.
The process is based on the traditional
operations of double salting, washing, drying
and final greasing of the leg.
The long maturation period, combined with the
climatic peculiarities of the Valnerina hills, give
the product the guarantee of authenticity and
quality typical of the best pork butchering
tradition.
It has a pink color with a slightly spicy aroma
and an intense but not salty flavor.
