Chitarra is the Italian word for guitar, an instrument. The name comes from
the fact that the wooden pasta shaping machine (a wooden frame with thin strings like a guitar) used in Abruzzo in Italy around 1860 resembles a guitar. 

This chitarra pasta has a satisfying chewy texture that falls somewhere between spaghetti and bucatini; its square cross-section has slightly more surface area than cylindrical noodles, so it holds onto sauce amazingly well.
