Typical Umbrian pork salami stuffed into honeycomb casings. Lightly smoked and made with various cuts of pure pork meat, medium - large grained and only flavoured with natural seasonings. Ageing takes place in the cellar, first in one with wood burning fireplace, then it is transferred into other cellars to finish ageing. During the curing phase, the environment promotes ageing, and the salami gains its typical flavour and texture.
