It is a cured meat with a particular shape and a unique intense taste. The name Coglioni di mulo (mule?s testicles), is due to the oval-shape it has because of the packaging of the meat in a hand-sewn casing, to be tied in pairs of two so they can be put to age on a rod or a wooden pole. The tradition of Norcia mule's testicles used by our craftsman is very old, linked to the peasant habit of killing the pig for?family needs during the cold and long winter of Umbrian mountain areas. Its production is quite limited and this characterizes it as a niche product available almost exclusively in the production area.
