Agnolotti is a type of pasta stuffed with meat, traditional from Piedmont. The origin of the name is uncertain: the Piedmontese tradition identifies a chef named Angiolino, better known as Angelot, who originated the recipe. In another more modern theory, the name derives from the Piedmont dialect 'anulòt', which is nothing more than an iron used to cut this mass in the shape of a ring, which according to some was precisely the primitive form that Agnolotti took.
