Here is the recipe for a tasty summer savory pie made with simple and seasonal ingredients. The protagonists are red and yellow cherry tomatoes with smoked scamorza cheese and appetizing anchovies. A puff cake, easy and quick to make, perfect at aperitif time or as an appetizer for a dinner with friends.


Ingredients:

  • 2 round discs of puff pastry

  • 200 g of smoked scamorza cheese

  • 150 g of cherry tomatoes

  • 4-5 anchovy fillets in oil

  • a few basil leaves

  • Origan

  • extra virgin olive oil

  • salt


The summer savory pie is an easy and quick recipe to make, ideal as an appetizer or appetizer for an aperitif and, in a larger portion, also perfect for a quick lunch. Good both warm and at room temperature.


It is a puff pastry filled with cherry tomatoes and smoked cheese, anchovies and basil: all simple ingredients that combined in this way, wrapped in puff pastry, make for a particularly appetizing dish.


Preparation


Phase 1


To prepare the summer savory pie, roll out the first disc of puff pastry in a round pan, about 20 cm in diameter. Cut the scamorza cheese into slices and arrange them on the dough, placing the slices slightly overlapping, until they completely cover the bottom.


Phase 2

Cut the cherry tomatoes in half, season with a drizzle of oil and a pinch of salt and spread them over the smoked cheese. Also add the anchovy fillets, well drained from the oil and chopped, and the basil leaves.


Phase 3


Place the second disc of pastry on the filling and seal the edges so that they do not open during cooking. Make cuts on the surface to facilitate the escape of moisture from the filling during cooking, sprinkle with a drizzle of oil, sprinkle the surface with oregano and transfer to a preheated oven at 200 ° C. Bake the cake for 25-30 minutes, until it has browned.


Phase 4


Remove the summer savory pie and serve it warm or cold.
