The savory pie with speck is a quick and easy recipe that highlights all the taste of this typical product, combining it with simple and at the same time delicious ingredients such as zucchini, brie, olives, dried tomatoes and cashews. A tasty and colorful dish: for every day, but also for a home made aperitif.

For the filling of 1 roll of rectangular puff pastry
2 courgettes
150 g of brie
100 g of thinly sliced speck
6 dried cherry tomatoes
40 g of cashews
salted ricotta
20 g of mixed pitted olives
For the marinating of courgettes
2 tablespoons of extra virgin olive oil
2 tablespoons of apple cider vinegar

Savory pies are always a great solution when you want to bring something creative but simple to make to the table. This savory pie with speck is no exception, a quick and easy recipe ideal for everyday meals and for the whole family.
A dish full of easily available ingredients that combined with each other make it particularly tasty. In fact, in our pastry we find speck which presented in rolls not only gives a nice aesthetic touch, but which with its typical delicate flavor gives the right balance between the other ingredients, marrying perfectly with: brie, zucchini left to marinate in oil, vinegar , salt, pepper and thyme, salted ricotta, dried tomatoes, mixed olives and toasted cashews.
Preparation
Phase 1

Start preparing your savory pie with courgette bacon. After removing the ends, cut the courgettes into very thin slices lengthwise using a mandolin. Transfer them by hand to a rectangular glass dish and season with oil, vinegar, salt, pepper and fresh thyme to taste. Cover with cling film and marinate in the refrigerator for at least 20 minutes.
Phase 2

Meanwhile, toast the cashews in a fat-free non-stick pan and set aside. Let them cool and chop coarsely. Cut the brie into slices and take the courgettes out of the fridge, making sure to drain them well.
Phase 3

Unroll the puff pastry with its parchment paper on a rectangular pan of dimensions that can contain it. With a sharp knife, make an incision (not deep) 1 cm from the edge, thus creating a kind of frame. Prick the part contained within the edges with the tines of a fork. Place the sliced brie on it and then cover with the marinated courgettes.
Phase 4

Then sprinkle with the grated salted ricotta with a grater with large holes and bake in a preheated oven at 200 ° for 25-30 minutes or in any case until the dough is golden brown.
Phase 5

Remove from the oven, add the mixed olives and dried tomatoes. Add the slices of speck rolled up on themselves.
