The flan of potatoes, pecorino and salami is a tasty dish, with simple ingredients. Baking in the oven creates a very appetizing golden crust. It is easily prepared and can be an excellent single dish or it can be served as a rich side dish.

800 g of potatoes
3 eggs
100 g of cream
80 g of grated pecorino
80 g of Hungarian-style salami
fresh thyme
2 tablespoons of breadcrumbs
oil

The potato, pecorino and salami flan is an easy and rewarding recipe, based on simple ingredients. Potato flan is a dish that is always very popular at the table and is one of those classic dishes for which everyone boasts their own recipe. There are many variations, because potatoes are one of the most versatile ingredients in the kitchen and are perfect to be combined with imagination with cheeses, meats, vegetables and even fish, as in the mackerel flan with potatoes and onion.
In this recipe, the sweetness of the potatoes goes perfectly with the strong taste of the pecorino and the tantalizing flavor of the salami.
If you want an even softer and more creamy consistency, add a cheese such as stracchino or crescenza to the egg mixture, and if you love a "stringy" dish, add a diced caciocavallo or mozzarella.
Preparation
Phase 1

Start preparing the potato, pecorino and salami flan, carefully washing the potatoes. Peel them and cut with a mandolin into thin slices.
Prepare the mixture by adding pecorino cheese, cream, salt and pepper to the beaten eggs. Dice the salami.
Phase 2

Steam the potato slices for a few minutes. Grease and bread a 25 cm square baking dish per side and add a layer of potatoes. Pour part of the mixture and add the diced salami and fresh thyme
Phase 3

Complete the entire pan with all the layers of potatoes, bake at 180 degrees for about 30 min. Serve the potato, pecorino and salami flan piping hot.
