Pasta with bacon and zucchini

Pasta with bacon and zucchini is a quick and easy recipe to prepare. Ready in 30 minutes, this first course is particularly delicious thanks to the addition of grated smoked provolone. An idea for a lunch, but also for a dinner with friends.

Ingredients
240 g of short pasta
2-3 zucchini
1 thick slice of bacon
2-3 sprigs of thyme
1 clove of garlic
50 g of smoked provola
extra virgin olive oil
salt
pepper
Simple, but with character. This is how we can define the zucchini and pancetta pasta that we present to you: an easy and quick recipe to prepare, but also versatile because it is good both for an everyday lunch, and for an informal dinner with friends.
The ingredients that make up this first course are zucchini and bacon cut into small cubes and browned in a pan with a little thyme to give an aromatic touch. The creamy side is instead thanks to the addition of smoked provola, which is joined at the end together with the pasta: a few tablespoons of cooking water, a good stir and that's it!
Preparation
Phase 1

To prepare the zucchini and pancetta pasta, first wash the zucchini and cut them into 4 wedges lengthwise and then into thick slices, finally into cubes. Take the pancetta and always cut it into small cubes, more or less the same size as the zucchini.
Phase 2

In a non-stick pan, brown the bacon with the garlic clove and a few leaves of thyme, making it crisp, but not too dry. Remove the bacon and garlic and brown the courgettes in the same pan, which will flavor.
Phase 3

Meanwhile, boil a pot of salted water to cook the pasta. When the pasta is al dente, drain it directly in the pan (keeping a little cooking water) and mix together with the courgettes. At this point, add the grated smoked provolone and a few tablespoons of cooking water, in order to create a cream. Finally add the crispy pancetta, a drizzle of oil and a grind of pepper. Serve your zucchini and pancetta pasta immediately.
