24 slices of smoked bacon cut not too thin
50 g of grated pecorino
The classic omelette cut into cubes, or presented in the form of small single portions, is perfect for aperitifs or to start a dinner with friends. With the omelettes in bacon we present a quick and cheap recipe that is made with great ease, also suitable for everyday dinner.
These are baskets of smoked bacon filled with eggs, cream and pecorino cheese with delicate but very fragrant chives. Baked in the oven, these omelettes are drier and lighter. Of course, you can customize the filling by combining a different cheese, diced vegetables or a mixture of your favorite aromatic herbs.
To make the bacon omelettes, break the eggs into a bowl and beat them with a whisk together with the grated pecorino, cream, chopped chives, salt and pepper. Mix everything just enough to mix and set aside.
Take 2 slices of bacon and cut them in half. Use the 4 pieces thus obtained to create a shell in a muffin mold. To perform this operation correctly you will first need to create a cross and then insert the two remaining pieces diagonally, so as to completely cover both the base and the edges. Proceed in this way until all the ingredients are used up. Pour the egg mixture into each "shell" of bacon, using a small ladle.
Put in a preheated oven at 180 ° and cook for 20-25 minutes. Remove the pancakes in the bacon from the oven, turn them out gently and serve immediately.
