To prepare for an appetizer or as a first course, crepes roses are an easy recipe and at the same time a graceful way to present the pancakes au gratin. With a simple and delicious filling of ham and crescenza.
2 whole eggs
250 g of flour 00
500 ml of milk
300 g of cooked ham
400 g of crescenza
Crepes roses are a very pretty way to present crepes. A dish to be enjoyed as an appetizer or as a first course.
The recipe is quite easy and after preparing the crepes - in this way it will be very simple - they are filled with cooked ham and crescenza. It can also be very useful to make the crepes in advance and keep them in the refrigerator, and then complete them when you put them in the oven. They can also be prepared in single-portion version, using aluminum cups for muffins or cocotte. You can follow the recipe for crepes without eggs in case of intolerance or allergy.
To make crepes roses, start by preparing the basic crepes recipe. In the glass of the hand blender pour in the following order: the eggs, the flour and finally the milk. Blend everything until you get a smooth and fluid batter, without lumps.
Transfer to a bowl, cover with cling film and let it rest for 1 hour. After the standing time, take the batter back and mix again. Heat a non-stick pan, grease it carefully with a knob of butter and remove the excess fat with a piece of absorbent paper. Then pour in a ladle of batter and tilt and rotate the pan so as to distribute it evenly. Cook for a couple of minutes over medium-low heat. With a spatula, turn the crepe and continue cooking on the other side. Proceed in the same way until the batter is finished, stacking the crepes on a plate as they are ready.
Procedete quindi con la farcitura. Tagliate a metà ogni singola crêpe e piegate in sotto la parte del lato curvo in modo da ottenere un rettangolo. Disponete su ogni crepes mezza fetta di prosciutto cotto e un po' di crescenza, precedentemente ammorbidita con un cucchiaio e messa in un sac-à-poche.
Roll the stuffed crepe on itself and place it in a baking dish. Proceed as described until all the crepes roses are filled and placed in the pan, one next to the other. Bake and gratin at 180 degrees for a few minutes, until the cheese is melted and the roses are just golden.
Remove the crepes roses from the oven and serve immediately.
