Bresaola with rocket salad and Grana

Bresaola with rocket and parmesan: a quick and easy cold dish ... but very satisfying! Great for a quick lunch, for a fresh dinner and also as an appetizer. With a little attention to the quality of the raw materials it turns out a small delicacy.

Ingredients
200 gr of bresaola
1 bunch of rocket salad
Grana Padano flakes
1 lemon
extra virgin olive oil

A cold dish among the most popular and loved: bresaola with rocket salad and Grana Padano PDO seasoned with an extra virgin olive oil and lemon vinaigrette. And as often happens with simple things, it should not be underestimated at all.
Not only because it is a dish that is enjoyed with pleasure at lunch and dinner, also as a tasty appetizer, especially when it is warmer. But precisely because the bresaola with rocket salad and Grana Padano gives a lot of satisfaction by focusing on the good quality of the ingredients.
Bresaola della Valtellina, for example, is produced with the finest cuts of beef, such as the tip of the hip, it is salted raw and dried. The result is a very nutritious cured meat, by far the lowest in fat, so delicious but also an ingredient that allows imaginative combinations.
Also try the bresaola with fruit: figs, grapes and melon or with fresh cheeses as in the recipe of the dumplings with ricotta, rocket salad and pecans. Or customize your bresaola with rocket salad and parmesan by adding a few sweet tomatoes, or a few drops of balsamic vinegar, omitting in this case the lemon juice.
Preparation
Phase 1

To prepare the bresaola with rocket and parmesan, arrange the sliced ​​meat on a flat plate, making sure that the slices overlap only partially. In a bowl emulsify with a whisk half a glass of oil with the lemon juice, filtered through a colander, and with a grind of pepper to taste.
Phase 2

Season the bresaola with the emulsion poured over the slices and leave them to flavor for up to half an hour. Just before serving, rinse the rocket and dry it well, cut it into strips and add it to the dish.
Phase 3

Complete with the cheese flakes and immediately serve the bresaola with rocket salad and Grana Padano.
