An easy recipe to prepare a delicious and stringy appetizer! The bread rolls are the wrapping for a filling based on tomato, cheese, olives and capers. The ideal recipe if you do not have a great deal of manual skills in the kitchen but want to offer a tasty dish to friends for an aperitif.

Ingredients
4 slices of bread for sandwiches
1 egg
bread crumbs
150 g of stringy cheese
capers
olives to taste
4 tablespoons of tomato puree
basil leaves
extra virgin olive oil
To prepare these cannelloni, you do not need to roll the dough, just crush the bread with a rolling pin to make the wrapper more compact and easy to roll.
This recipe is designed to bring a delicious appetizer to the table in a simple and quick way, perhaps for an improvised aperitif. Of course it does not have the characteristics of the typical meat or vegetable cannelloni, but not even the complexity, they are ready in half an hour and using a quality filling will satisfy all palates.
The cheese in the filling must be a stringy cheese, you can use scamorza, provolone, gruyere or taleggio, we do not recommend mozzarella because it would impregnate the whey bread.
Preparation
Phase 1

To prepare the cannelloni with baked bread, you need to crush the slices of bread with a rolling pin, until you get thin sheets. Prepare the filling by combining the chopped olives, chopped capers, tomato puree, basil and diced cheese.
Phase 2

Arrange the filling in the center of each slice of bread diagonally. Close the slices of bread with cannolo.
Phase 3

Pass the cannoli first in the egg and then in the breadcrumbs.
Phase 4

Place the cannoli in a pan and sprinkle them with a drizzle of oil. Bake in a preheated oven at 180 for 15-20 minutes, however they must be golden brown. If you wish, finish with the grill for a couple of minutes. Serve the baked bread cannelloni hot.
